What You Need:

  • For the broth:

1 whole chicken (about 3–4 pounds)

  • 1 large onion, peeled and halved
  • 1 4-inch piece of ginger, halved lengthwise
  • 5-6 star anise
  • 1 cinnamon stick
  • 3-4 cloves
  • 1 cardamom pod
  • 1 tablespoon coriander seeds
  • 1 tablespoon salt
  • 1 tablespoon sugar
  • 4 quarts water
  • For serving:
  • 1 pound rice noodles
  • 3-4 scallions, chopped
  • 1 bunch cilantro, chopped
  • 1 lime, cut into wedges
  • Bean sprouts (optional)
  • Fresh basil leaves (optional)
  • Sliced jalapeños (optional)
  • Hoisin sauce (optional)
  • Sriracha sauce (optional)

How to Make It:

  1. Prepare the chicken: Place the chicken in a large pot. Cover it with water. Bring it to a boil.
  2. Skim off any foam that rises to the top. This will make your broth clear.
  3. Reduce heat to a simmer. Cook the chicken for about 30 minutes.
  4. Remove the chicken from the pot. Let it cool. Then pull off the meat. Save it for later.
  5. Toast your spices: In a dry pan, toast the anise, cinnamon, cloves, cardamom, and coriander. Do this until they smell great. It takes about 3 minutes.
  6. Put the toasted spices in a cloth bag. This is your spice bag.
  7. Add the spice bag, onion, ginger, salt, and sugar to the pot with broth.
  8. Cook the broth for another 30 minutes. It will smell amazing!
  9. Strain the broth. Remove the spice bag, onion, and ginger. Now you have a clear, tasty broth.
  10. Cook the noodles: Follow the instructions on the package. Then rinse them in cold water. This stops them from cooking more.
  11. Assemble your pho: Place some noodles in a bowl. Add chicken on top.
  12. Pour the hot broth over the chicken and noodles.
  13. Add toppings like scallions, cilantro, lime wedges, bean sprouts, basil, and jalapeños.
  14. Enjoy: Serve with hoisin sauce and sriracha on the side. Let everyone add what they like!
